Anything with Spaghetti Squash makes me a happy happy person :)
Ingredients:
3 cups
Spaghetti Squash, cooked (6 greens)
½ cup egg
beaters (1/4 lean)
¾ cup or 3
oz 2% Reduced fat cheddar cheese, divided (3/4 lean)
¼ tsp
garlic powder (1 condiment)
¼ tsp onion
powder (1/2 condiment)
1/8 tsp
salt (1/2 condiment)
Dash of
pepper
Directions:
Cook
spaghetti squash and measure 3 cups or 465 grams of spaghetti squash and place
into a medium bowl. Reserve the rest for another use. Preheat oven to 375
degrees. Spray a casserole dish with nonstick cooking spray. Combine all the
ingredients in a medium bowl, except for ¼ or 1 oz of cheese. Stir until mixed
thoroughly. Pour contents into prepared casserole dish. Bake for 25 mins. Add
remaining cheese to the top of the casserole. Bake for an additional 10 minutes.
Let set for 15 mins. Serve warm. Don’t forget to add ½ of a lean to complete
your lean and green meal, such as 3.5 oz of fish or shrimp, 3 oz of chicken, or
2.5 oz of beef/pork.
Servings: 2
servings with ½ lean, 3 greens, and 1 condiment per serving.
Additions: Add 1/2 lean and healthy fat
